Question by ZBR: What is the best home brew beer recipe?
I have recently started making my own beer at home and I have yet to find a recipe that I really like. Do you have any suggestions for finding a good recipe, or website which sells them?

I typically like lagers (but they are tough to brew at home due to the temperature requirements). An ale would be suitable.

I am a former chef and like the Belguim Fruit beers, like the cherry or framboise ones, there is a german beer were they smoked the barley before brewing, the Danish beer called Old Nick, it is 10% alcohol.

Wheat beers amke a nice impression and the one's from the easten block, like the Czech Republic, Poland and Russia are a unique flavour, I had a Ukrainian one that tasted like a rusty pipe on time, try not to get that one, we had one here in Canada a Coffee lager, and most people in the UK are still not aware of the famous Porters still brewed.

You only really have to think about 3 types.

Hand Pull, Keg Dispense and Measured Pump.

The last one is the easiest as it is used with over sized glasses – You simply put the glass under it and hit a button for it to measure a half pint into the glass, if you need a pint you hit it twice.

KEG DISPENSE can have several different types of handle, flip, tilt, turn, but all work on the same principle. Hold the glass tilted under the tap and straighten it up as beer gets towards the top of the glass.

KEG DISPENSE is also how Guinness is served, and smooth/cream slow drinks. these need slightly different treatments as they produce a thick head, so are poured, as above, until the glass is about 80% full and then let sit for a while before topping up.

HAND PULL is how Real Ale is served and you simply put the glass under the nozzle (the first answerers comment about putting the nozzle ont eh bottom of the glass only works for "swan neck" systems, and not all pubs use these) and steadily pull the handle.

If it is set up right it should take about 3 1/2 pulls to fill a pint glass.

As stated by the 1st answerer, these can sometimes be used with sparklers, to produce a thicker head.
